"Aguitas," or "little waters" are commonly served in Mexican homes with lunch. Not quite a juice, though more than just flavored water, aguitas can be made with dozens of fruits, herbs, flowers, and flavors. Aguita de limon con chia is refreshingly tart, though the hint of sweetness nicely blankets the acidity and the little pops of chia give it a fun texture. Perfect for entertaining or adding something special to a regular weeknight dinner--can't go wrong with aguita de limon!
Serves 12-15
Ingredients:
-1 large pitcher of water (about 2 gallons)
-15 limes, squeezed
-1.5TBS chia seeds
-1/2 cup of sugar, plus more to taste
-ice
-sliced lime for garnish
-tequila or mezcal (optional)
Directions:
1. Fill your pitcher with water. Cut the limes in half and squeeze them into the pitcher, being careful not to allow the seeds in.
2. Add the sugar and stir to dissolve.
3. When the sugar's dissolved, add the chia seeds.
4. Taste to see if you want to add more sugar.
5. When you're ready to serve, add ice to the pitcher and decorate the rim of the serving glasses with a slice of lime.
Serve and enjoy, with a touch of tequila or mezcal if desired.
