Soft pork ribs with hunks of caramelized onions and smokey chipotles in an acidic tomatillo sauce. Such a perfect combination of every flavor you could want on one plate.
Ingredients:
-1kg tomatillos, cut in chunks
-1 large onion, sliced
-1kg pork ribs
-1 can of chipotles in adobo
-1 bay leaf
-Oil
-Salt
Directions:
1) In a large pot, cover the pork ribs with water and 1Tbs salt and boil for about 30 minutes, until it's soft when poked with a fork.
2) Strain the ribs from the broth and collect the stock.
3) In the same large pot, add oil and the sliced onions and cook a just a little, until it's not yet translucent. Add the tomatillo chunks and half of the pork stock.
4) With a top on, bring to a boil and let cook, stirring occasionally to avoid sticking to the bottom. Cook until the tomatillos start to break down, about 20 minutes.
5) Add a can of the chipotles in adobo and the bay leaf.
6) Let cook for another 10 minutes. Taste, and if it's too acidic, add a pinch of baking soda.
Serve and enjoy with warm tortillas and beans :)
