Tortitas de Ejote en Salsa de Jitomate [Little green bean omelettes in tomato sauce]


Step up your egg game with this easy and delicious recipe perfect for brunch or a quick weeknight meal.

Ingredients:

-1kg green beans

-12 eggs

-20 roma tomatoes

-1/2 onion

-2 cloves of garlic

-1 Tbsp of oregano

-1 Tbsp flour

-Oil for frying

-Salt

Directions:

1) Cut the green beans into small, 1/2" sized pieces.

2) In a large pot of water, boil the green beans for about 20 minutes with 1 Tbs of salt.

3) In another large pot, bring the roma tomatoes to a boil until the skin starts coming loose and looks wrinkly, about 5-10 minutes.

4) When the green beans are ready, strain out the water. In a large bowl, crack all of the eggs and beat. Add the tablespoon of flour and the green beans. Mix well.

5) In a shallow frying pan, heat a 1/2' of oil until hot. Scoop a ladle full of the egg mixture into the pan and fry on both sides until cooked through. Make these little omlettes until you've finished the egg mixture.

6) In a blender or food processor, blend the tomatoes with the onion and garlic and pour into a large soup pot.

7) Bring the tomato sauce to a summer. Add the oregano and continue to simmer for another 5 minutes.

8) Add about 5 cups of water and bring back to a simmer.

9) Add the tortitas to the sauce.

Serve and enjoy with warm tortillas and beans :)
