Sausage and Potatoes in Salsa Verde


By far one of the easiest recipes that our family makes--but don't mistake that fact for a lack of flavor! This dish KILLS IT in the flavor realm, with a tangy and acidic tomatillo-serano sauce that perfectly complements the fat-marbled sausage. Potatoes help soak up all that yummy sauce (though you can add other vegetables if you're so inclined) and you're DONE!

Serves 8-10

Indredients:

-1kg good sausage

-2.5 cups of potatoes, cubed

-25 serrano peppers with stems pulled off

-2 cloves of garlic

-1/2 onion

-45 small tomatillos, leaves off and washed

-1 cube of chicken bullion

-salt, to taste

Directions:

1. Cut the sausage into 2-3" pieces

2. In a big pot, fry the sausage in a little oil until it's browned on all sides, about 5 minutes

3. Add the cubed potatoes and keep moving it around in the pot for another 15 minutes. You might want to add more oil if it's too dry.

4. In a blender or food processor, add garlic, onion, tomatillo, and serrano with a little water to make it easier to blend. Liquefy to make your salsa. Note: you will likely have to work in batches to get everything to fit.

5. Add salsa to the pot and add 1/2 tbs of salt.

6. Add 5 cups of water and the bullion cube.

7. Continue cooking until potatoes are done, about 20 minutes.

8. Taste and add more salt if needed.

Serve and enjoy with warm tortillas (used like utensils) and beans if desired :)
