Chorzio & Egg Breakfast Tacos


Perfect for breakfast, lunch, brunch, linner, & dinner. Rich, filling, a perfect accompaniment for salsa or avocado (or both). You just can't go wrong with some spicy chorizo & eggs.

Serves 8

Ingredients:

-12 eggs

-3 chorizo sausages

-1 onion, diced

-3 cloves of garlic, finely diced

-salt, to taste

-cilantro (optional, for garnish)

Directions:

1. Over medium heat in a shallow pan, cook the onion in oil until almost translucent

2. Use your hands to crumble the chrorizo into the pan. Add the garlic.

3. Cook until the chorizo starts to get cooked and crispy, about 5-10 minutes.

4. Lower the burner to low heat and crack the eggs directly into the pan; scamble.

5. Continue over low heat until the eggs are softly cooked.

6. Taste and add salt.

Serve with warm tortillas, beans, sliced avocado one of our many delicious salsas, and a cilantro garnish if so desired :)
