Did you know Mexico has its version of a potato latke? Neither did we.
Makes about 20 pancakes
Ingredients:
-3 kg potatoes (40 small white potatoes)
-17 eggs
-2 cans of tuna (optional)
-1 large onion, diced
-oil, for frying
-salt and pepper, to taste
Directions:
1. Boil potatoes for a half hour or until soft enough to prick with a fork.
2. Peel the potatoes and mash them.
3. Add 2 tablespoons of salt, diced onion, and eggs and mix well.
4. If using tuna, add it in and mix.
5. In a frying pan, add an inch of oil and let it warm over medium-high heat. Add in a large spoonful of the potato mixture. When the bottom is golden brown, flip it and let it fry on the other side.
Serve and enjoy with our ensalada de ejote salad, any one of our salsas, and of course, tortillas!
