Picadillo


Simple and delish tacos with seasoned ground pork (or beef) simmered in tomato sauce with carrots and potatoes. Super easy and super goooood.

Serves 8-10

Ingredients:

-8 small potatoes, diced

-8 small carrots (or 5 large), diced

-1/4 kilo of dry green peas, unpeeled (or half a can)

-1 kilo of ground pork or beef

-8 roma tomatoes

-2 cloves of garlic

-1 bay leaf

-2 cubes of chicken or beef bullion

-2 TBS oil

-salt, to taste

Directions:

1) In a blender or food processor, add the tomatoes and garlic with a cup of water.

2) If using fresh peas, boil them in a large pot until soft, about 25 minutes

3) In a deep pan over medium heat, add the oil. When the oil's hot, add the ground meat and stir.

4) After 2 minutes, add in the diced carrots and 1TBS of salt and continue to stir for another few minutes.

5) Add the potatoes and continue stirring until the juices have evaporated, about 10-15 minutes.

6) Add the blended tomatoes with the bullion and bay leaf.

7) Add the peas and cook for another 15-20 minutes or until the potatoes are cooked through and soft. Taste for salt.

Serve and enjoy as tacos and feel free to add lime, cilantro, radish, and/or one of our fantastic fresh salsas!
