Molletes


A great breakfast, lunch, or mid-day snack, molletes are simply halved rolls with refried beans and cheese broiled and topped with fresh pico de gallo salsa. Stupid easy and super delish!

Makes 8 halves

Ingredients:

-4 tortas, rolls, or small baguettes

-1 cup shredded queso panela (or cheese of your choice)

-2 roma tomatoes, finely diced

-1/2 onion, finely diced

-1 serrano pepper (or more if you like spicy), finely diced and with seeds removed

Directions:

1) Move an oven rack to the top spot in the oven and preheat to broil.

2) Halve the rolls.

3) Spread the refried beans on each half of the bread and sprinkle with cheese.

4) Combine the diced tomatoes, onions, and pepper in a small bowl.

5) Place the halved rolls on a large baking dish and pop in the broiler. Watch carefully, checking after 5 minutes and then every 2 minutes, until the cheese is melted and begins to brown.

6) When the cheese is melted, take the rolls out of the oven and put the pico de gallo on top.
