Thinly sliced chicken breast + manchego cheese + ham + BACON rolled up and smothered in a poblano cream sauce. This is NO JOKE! And you wouldn't believe that it's actually super simple.
Serves 10-15
Ingredients:
-20 chicken breasts thinly sliced and pounded
-20 slices of manchego cheese
-20 slices of ham
-10 slices of bacon, cut in half
-4 poblanos, seeded
-1 cup of crema or sour cream
-1/2 cup of milk
-1 tsp salt, plus more to taste
Directions:
1. Preheat oven to 400°f.
2. Grease a baking dish to prevent sticking.
3. On a plate or flat surface, layer the following:
-1 thinly sliced and pounded chicken breast
-sprinkle of salt (on each side of the chicken)
-1 slice of ham
-1 slice of cheese
-1 slice of bacon
4. Roll it up and place the roll seam-side down into the baking dish.
5. Continue until all 20 rolls are in the pan.
6. To make the sauce, put the peppers, crema/sour cream, milk, and salt in a blender and liquefy. It should be the consistency of a thick pasta sauce, but if it's too thick you can add more milk. Taste and decide if you want to add more salt or pepper seeds for heat.
7. Pour the sauce over the roll-ups and pop in the oven.
8. Bake for 45 minutes. Check to make sure the chicken is cooked through.
