Ensalada de Ejote (Green Bean Salad)


Let's be real: who really likes green beans? We were definitely not excited to try this salad...until we tried this salad. It's seriously GOOD, with a limey, slightly vinegary bite that brings out the flavor of both the hearty green beans and the sweet roma tomatoes. And with only 5 ingredients, this filling salad is #vegan #clean and something to feel good about. Plus it makes a great side dish to all of our other recipes!

Serves 7-9

Ingredients:

-1.5 lbs fresh green beans

-8 limes

-6 roma tomatoes, sliced

-1 white onion, sliced

Directions:

1) Pluck stems off the green beans and slice in half length-wise

2) In a large pot, cover green beans with water, add a TBS of salt, and bring to a boil. Continuing boiling for 15 minutes or until green beans are cooked but still slightly firm when you take a bite.

3) When green beans are ready, drain them and put in a salad bowl. Add the sliced tomatoes and sliced onions to the bowl and squeeze the limes over top, being careful not to allow the seeds to get in the bowl.

4) Add salt to taste.
